There are so many differences between the two versions it hard to really answer the question. Lets see umm 2003 (I assume thats what you meant instead of 2000) uses framework 1.1 2005 uses framework 2.0. That difference alone makes the experience drastically different there are alot of new controls,classes and methods inside the framework to help make developers more productive and applications more robust.

If you are using VB.NET there were also huge improvements made to the language between the two versions including the addition of the My Namespace which is a collection of typically accessed classes, operations and info about your application and computer.

Even the look and Feel of IDE is different.
