main use of them to assign ip address to the client pc as per their request send to server. and DHCP can give ip to those pc. the period of lease ip add is bydefault 8 day.
in windows server mainly use of this DHCP-SERVER application to assing ip to diskless workstation or client-server network.

it also working on the basis of MAD id . you can enter mac id of some specific pc . than those assign ip get only by this mac id machine .

main reason to establish DHCP is to assign ip automatically not manualy enter in CLIENT site pc.
